Carlo Scotto’s Farfalle Pasta a La Genovese

Ingredients

  • 1kg of white onions
  • 2 cloves of garlic
  • 150g of butter
  • 150g of olive oil
  • 150g Beef Bone Marrow
  • 500ml chicken stock
  • 500ml beef stock
  • Pinch of Salt
  • Pinch of Pink pepper
  • Pinch of Black pepper
  • Pinch of Italian style herbs

For the Pasta Dough

  • 200g of flour 00
  • 100g fi ne semolina
  • 110g yellow egg yolk
  • 1 whole egg
  • 15ml of olive oil
  • 30ml of milk
  • If needed, a splash of water

Method

  1. Prior to cooking, roast the bone marrow in a 200 degree oven for about 12-18 minutes until opaque but still holds its shape and set aside (not in the fridge).
  2. Start to slice the onions very thinly and cook in all the oil and butter at a low temperature.
  3. Add water, as well as salt and herbs and reduce. Once thickened, blend to a very smooth puree and set aside.
  4. Dice 100g of the bone marrow and add to the puree.
  5. Make the dough by combining ingredients and let it rest for 30 minutes.
  6. Roll out the dough and cut the pasta sheets into small squares, before shaping it in farfalle (a butterfly shape which can be done by bringing two sides of the square together like an accordion, using your thumb and forefinger to seal the pasta together in the middle).
  7. To another pan, add a bit of butter and 50g of bone marrow, letting both melt together on a low heat.
  8. Add the chicken and beef stock and make an emulsion. Season and set aside.
  9. Cook the pasta in salted boiling water for 5 minutes.
  10. Add the cooked pasta to the reduced emulsion and add 2 big spoons of the onion puree.
  11. Toss together and add the remaining bone marrow once off the heat.
  12. Cook for a minute or two and remove from the heat.
  13. Add some fresh grated parmesan and chopped chives and enjoy!

Top Tips

  1. It’s a simple Pasta Dish but make sure that the parmesan cheese is 36 months aged for a strong and peppery taste.
  2. You can buy chicken and beef stock in any supermarket.
