Festive Christmas Cabbage

Ingredients

  • 1 red cabbage, finely sliced
  • 1 red onion, finely sliced
  • 3 tbsp Filippo Berio Mild & Light Olive Oil
  • 2 tbsp Filippo Berio Gran Cru Balsamic Vinegar
  • 100g fresh cranberries
  • 100g fresh cranberries
  • 1 cinnamon stick
  • 150ml red wine
  • 100ml vegetable stock
  • 2 tsp brown sugar
  • Zest of 1 lemon or orange, to finish
  • Salt and pepper, to taste

Method

  1. Begin by preparing the cabbage. Remove any tough outer leaves, slice it thinly, rinse, and set aside.
  2. Heat the Filippo Berio Mild & Light Olive Oil in a large saucepan over medium heat. Add the sliced red onion and cook gently for about 5 minutes, stirring occasionally, until softened and fragrant.
  3. Pour the Filippo Berio Gran Cru Balsamic Vinegar over the softened onions, stirring to coat. Let it bubble for about a minute to enhance the sweetness.
  4. Add the red cabbage and stir well to combine with the balsamic-coated onions. Cook for 5 minutes, allowing the cabbage to soften slightly.
  5. Add the star anise, cinnamon stick, and fresh cranberries, stirring them into the mixture to release their festive aromas and sweetness.
  6. Pour in the red wine and vegetable stock, mixing well to ensure everything is evenly combined.
  7. Cover the pan with a lid and simmer on low heat for 25–30 minutes, stirring occasionally, until the cabbage is tender and the liquid reduces into a rich, glossy glaze.
  8. Stir in the brown sugar at the end, mixing it through to balance the flavours.
  9. Remove the star anise and cinnamon stick before serving (or use them decoratively on top of the dish, ensuring they’re not eaten).
  10. Finish with a sprinkle of lemon or orange zest for brightness, and season to taste with salt and pepper.
