Mulled Wine Bellinis

Mulled wine originated in the second century, created by the Romans who would heat wine to keep themselves warm during the winter. Giving the classic Bellini a festive makeover, this seasonal cocktail combines the fruity sparkle of Prosecco with the aromatic flavours of mulled wine, adding a touch of Christmas cheer to every sip!

Ingredients

For the mulled wine syrup

  • 750 ml bottle of good quality Italian red wine
  • 2 cinnamon sticks
  • 2 clementines, halved
  • 4 cloves
  • 2 star anise
  • 1 vanilla pod, halved lengthways
  • ½ lemon
  • 100 g caster sugar

For serving

  • 1 chilled bottle of Prosecco

Method

  1. Put all the syrup ingredients in a pan, bring to a gentle boil, then simmer for 30 - 40 minutes, until reduced to 250 ml. Strain, jar, seal and chill.
  2. To serve, put 15 ml syrup in a champagne flute and top with prosecco.
