Panettone & Olive Oil Gelato

Panettone is an essential part of every Italian Christmas. Delicious on its own, panettone is also a fantastic recipe ingredient. So, if you have any leftovers this Christmas, transform them into wonderful Panettone Ice Cream, with blended panettone crumbs and citrusy notes. For an extra special touch, finish with a drizzle of Filippo Berio Gusto Fruttato Extra Virgin Olive Oil.

Ingredients

  • 150g panettone, cut into rough cubes
  • 450ml full fat milk
  • 300ml double cream
  • 1 vanilla pod
  • 4 egg yolks
  • 100g caster sugar
  • 75ml Filippo Berio Gusto Fruttato Extra Virgin Olive Oil, plus extra for drizzling

Method

  1. Preheat the oven to 180 °C (Gas Mark 4). Add the panettone to a food processor and pulse it into a coarse crumb. Spread the crumbs on a baking tray and toast for about 10 minutes, stirring once.
  2. Place the milk and cream in a medium pan, split the vanilla pod and add the seeds, and bring to a simmer. Then, add the panettone crumbs. Cover with a lid and let it stand for 1 hour.
  3. Remove the lid and return the mixture to a boil.
  4. Meanwhile, place the egg yolks and sugar in a large bowl and beat them with an electric whisk for about 5 minutes, until the mixture turns pale, thick, and leaves a trail.
  5. With the mixer still running, pour the milk mixture into the egg mixture and beat until combined.
  6. Give the pan a quick rinse and return the mixture to it. Cook over low heat, stirring continuously, for about 4 - 5 minutes, until it thickens enough to coat the back of a spoon. Do not let the custard boil, or it will scramble.
  7. Pour the mixture into a bowl, stir in the olive oil, cover with cling film, and chill for 2 - 3 hours or overnight.
  8. Churn the ice cream in an ice cream machine; alternatively, pour it into a shallow container and freeze for about 1 hour. Whisk the mixture, then return it to the freezer and repeat this process every hour until the mixture is frozen.
  9. Serve in scoops, finish with a drizzle of Filippo Berio Gusto Fruttato Extra Virgin Olive Oil.
