Spiced Plum Pandoro Trifle

Don’t waste your leftover Pandoro! Turn it into a delightful trifle with this simple recipe. We’ve layered the Italian sweet bread with spiced plums and a smooth lemon custard made with Olive Oil for a silkier, fruitier touch – a perfect finale to a festive meal!

Ingredients

  • 200g Pandoro, cut into cubes
  • 3-4 tbsp Amaretto liqueur

For the spiced plums

  • 8 large plums, halved and stones removed
  • 1 cinnamon stick
  • 2 star anise
  • 2 cloves
  • 50g demerara sugar
  • Finely grated zest and juice of ½ orange
  • Finely grated zest and juice of ½ lemon
  • 2 tbsp cold water

For the lemon and olive oil custard

  • 3 large eggs
  • 100g caster sugar
  • Finely grated zest and juice 2 lemons (about 100 ml)
  • 1 tsp vanilla extract
  • 100ml Filippo Berio Extra Virgin Olive Oil

For the topping

  • 300ml double or whipping cream
  • 2 Amaretti biscuits, crumbled

Method

  1. Place the plums, cut side up, in a shallow ovenproof dish with the cinnamon, star anise, and cloves.
  2. Scatter over the demerara sugar, add the water, orange and lemon zest and juice. Roast in a preheated 200 °C oven (Gas Mark 6) for 15 minutes, basting halfway, until tender. Remove from the oven and allow to cool in the syrup. Once cool, remove the spices.
  3. For the custard, put the eggs, caster sugar, vanilla extract, lemon zest (reserving some for decoration) and juice in a large heatproof bowl, and whisk for 3 minutes. Slowly whisk in the Filippo Berio Extra Virgin Olive Oil, then whisk for a further minute.
  4. Set the bowl over a pan of simmering water and whisk for 10 minutes, until smooth and thickened (the mixture should coat a wooden spoon). Remove from the heat, cover with cling film and cool, then chill in the fridge.
  5. Cut the Pandoro into cubes, then layer with the liqueur, plums, and syrup in a trifle bowl. Top with custard.
  6. with biscuits and lemon zest. Chill until ready to serve.
